Zucchini Rolls for your Snack Plate

Putting a festive snack plate together with healthy snacks? Try these zucchini rolls. The juicy zucchini, oil-rich sun-dried tomatoes, salty feta cheese and garlic oil are a great combination. A celebration of flavors and a great way to continue to enjoy them even after weight loss surgery!

This is what you need for Zucchini Rolls

For 4 people

  • 1 zucchini
  • 6 sun-dried tomatoes
  • 70 grams feta cheese
  • 1 clove of garlic
  • lemon juice and 1 tablespoon olive oil
  • cocktail sticks


You'll also need

  • cutting board
  • knife
  • cheese slicer or mandolin
  • bowl
  • grill pan
  • kitchen paper

How to make the recipe

  1. Cut the zucchini into 8 thin slices. Use a cheese slicer or mandolin to achieve this.
  2. Finely chop the garlic and mix with olive oil and lemon juice.
  3. Brush the zucchini slices with garlic oil and grill them in a grill pan until golden brown.
  4. Drain the zucchini on a piece of kitchen paper.
  5. Finely chop the sun-dried tomatoes and feta and mix together. Place the mixture on the zucchini slices and gently roll up.
  6. Secure with a cocktail stick and your appetizer is ready!
